Ingredients

  • 1 medium onion
  • 2 leeks
  • Chicken stock
  • 3 medium potatoes

Method

  1. Sweat 1 medium onion and about 2 leeks in pressure cooker.
  2. Add chicken stock or water and chicken stock cube and about 3 medium potatoes. Cook for around 10 minutes under pressure.
  3. Quantities are elastic(!). Don't use too much liquid as the thickening from potatoes. Only comes with the liquidising and after the soup's consistency can be adjusted and seasoned to taste. Serve hot or chilled.

Serve hot or cold.
