Ingredients
- 2 sliced aubergines
- 3-4 table spoons olive oil
- 4-5 medium onions sliced
- 1lb minced beef or lamb
- 4 tomatoes peeled and sliced or tinned (1?)
- 1/4 pint of brown stock (juice from tinned tomatoes)
- 1/4 tablespoon tomato puree
- 1 pint mild cheese sauce or 2 eggs and 1/4pt cream
- Salt and pepper.
Method
- Slice and fry aubergines in 2 tablespoons of oil for 4-5 minutes then put in bottom of overproof dish
- Fry onions in oil for about 5 minutes.
- Put layer of onion, aubergine and browned beef also in layers and tomatoes on top.
- Mix tomato puree and stock.
- Cook in oven for about 30 minutes then pour on well seasoned beaten eggs and cream. Finish for 15-20 minutes.
