Ingredients

  • 1 gem lettuce
  • 1 cucumber
  • 4 tablespoons of mayonnaise
  • 2 heaped teaspoons of tomato ketchup
  • Shake of tabasco
  • 250g peeled prawns
  • Squirt of lemon juice
  • Pinch of paprika

Method

  1. Shred a gem lettuce heart and pile it into a couple of chilled glasses.
  2. Peel and dice a cucumber and add it to the lettuce.
  3. Mix the mayonnaise with the tomato ketchup, a good shake of Tabasco, a squirt of lemon juice and pinch of paprika.
  4. Mix with the prawns.
  5. Pile the dressed prawns on top of the lettuce and serve with a lemon wedge balanced on the side of the glass.
