Ingredients

  • 3 Large green mangoes
  • 2 Red chilies, chopped finely
  • 1/2 teaspoon Garam masala
  • 1 1/2 cups Raw sugar
  • 1 cup White vinegar
  • 1 tablespoon Fresh ginger, finely grated
  • 1/2 cup Dates, finely chopped

Method

  1. Peel the green mangoes, remove the stones, chop into large slices and sprinkle with salt.
  2. Blend the garam masala with the raw sugar and place in a large pan with white vinegar. Bring to the boil.
  3. Reduce heat and simmer for 5 minutes.
  4. Add mango, chili, ginger and dates.
  5. Simmer for 1 hour or until the mango is tender.
  6. Pour into warm sterilized jars and seal.
  7. Store in the refrigerator.
