Ingredients
- 3 Large green mangoes
- 2 Red chilies, chopped finely
- 1/2 teaspoon Garam masala
- 1 1/2 cups Raw sugar
- 1 cup White vinegar
- 1 tablespoon Fresh ginger, finely grated
- 1/2 cup Dates, finely chopped
Method
- Peel the green mangoes, remove the stones, chop into large slices and sprinkle with salt.
- Blend the garam masala with the raw sugar and place in a large pan with white vinegar. Bring to the boil.
- Reduce heat and simmer for 5 minutes.
- Add mango, chili, ginger and dates.
- Simmer for 1 hour or until the mango is tender.
- Pour into warm sterilized jars and seal.
- Store in the refrigerator.
